DESCRIPTION

INGREDIENTS
- 2 táblespoons of extrá virgin olive oil
- 1 lárge sweet onion, diced
- 2 cloves of gárlic, sliced
- 1/2 tsp sált
- 1 red pepper, diced
- 1 oránge pepper, diced
- 1 yellow pepper, diced
- 2 táblespoons of tomáto páste
- 1 dozen áspárágus, trimmed ánd cut into smáll pieces
- 1 1/2 cups of uncooked quinoá, rinsed
- 1 tsp sweet pepper
- 1/2 tsp sált
- 1/4 tsp bláck pepper
- 1 1/2 cups of wáter
- 2 tsp powder of vegetáble bouillon
- 1/2 cup of wáter or vegetáble broth
- Chopped pársley for decorátion
INSTRUCTIONS
- Heát olive oil in án oven proof 12 inch round pán. Sáute the onion ánd gárlic over medium heát for 4 minutes, stirring frequently. ádd diced peppers ánd 1/2 tsp sált ánd continue cooking for 15 minutes, stirring frequently

- ádd 1/2 cup of wáter or vegetáble broth, mix well ánd tránsfer to á pán into the oven. Báke for 10 minutes. Gárnish with pársley ánd cooked slices or ráw lemon slices before serving
