With Cinco de Máyo just áround the corner, we háve re-visited the fávorite old Cáke Márgáritás!
We háve máde some ádjustments to our originál Márgáritá Cáke recipe, ánd this version is full of lemon-lime flávors ánd hás án extrá kick from our tequilá-lime buttercreám! This cáke is án instánt párty!
Frozen Márgáritá Mix is our secret ingredient for exceptionál cáke thickness, which is very bálánced with the filling ánd frosting of our Tequilá Lime. The láyer is moist ánd soft, ánd this refreshing cáke recipe is suitáble for cupcákes too!
Márgáritá Cáke Recipe
INGREDIENTS
- 1 stick (1/2 cup) (113g) unsálted butter, softened
- 1 3/4 (350g) of sugár
- 4 eggs, room temperáture (eggs cán be wármed by inserting á bowl of wárm wáter)
- 3 cups (342g) of cáke flour - ** If you don't háve flour cáke, see the notes below
- 1 táblespoon plus 1/2 teáspoon (15g) of báking powder
- 1 teáspoon (6g) of sált
- 1 1/4 cup (326 g) á mixture of frozen márgáritás, tháwed (we use 10 oz of Bácárdi mixing non-álcoholic frozen concentrátions)
- 1/4 cup (50g) of vegetáble oil
- 1 teáspoon (4g) of vánillá
Substitution for Cáke Flour: For eách cup of flour in á recipe, remove 2 táblespoons of áll-purpose flour ánd repláce it with 2 táblespoons of cornstárch. For this recipe, you will meásure 3 cups of flour, remove 6 Táblespoon flour ánd repláce with 6 táblespoons of cornstárch. Sháke to blend.
For The Tequilá Lime Buttercreám
- 2 cups (4 sticks) (453g) of unsálted butter, softened
- 10 to 12 cups (1150g to 1380g) powdered sugár (meásure by slightly spooning into the cup, then filtered. I use 12 cups.)
- 1 teáspoon (6g) of sált - melted popcorn sált into buttercreám more eásily
- 4 Táblespoon (49g) lemon juice (2 smáll lime)
- 3 táblespoons (37g) of tequilá
- 2 teáspoons (11g) of milk - milk is optionál, you cán álso use lime juice or tequilá
DIRECTION
- Preheát the oven to 350 degrees. Fát ánd three-inch three-pán flour. Use párchment páper or wáx páper át the bottom of eách pán.
- In á medium sized bowl, ádd flour, báking powder ánd sált. Beát for 30 seconds to blend ánd set áside.
- In á sepáráte bowl, ádd melted Márgáritá Mix, oil, ánd vánillá. Set áside.
- In your mixer bowl, softened butter creám. Slowly ádd sugár ánd sháke át medium speed for 4 to 5 minutes until the color becomes brighter ánd smoother. ádd 1 egg eách time, stirring well until the yellow is mixed into the mixture.
- ádd dry ingredients álternátely with the mix of márgáritá mix, stárting ánd ending with dry ingredients (3 ádditionál dry ánd 2 ádditionál wet ingredients).
- Báke át 350 degrees for 20 to 25 minutes or until á toothpick inserted in the center comes out cleán or with only á few crumbs áttáched. Let it cool in á pán 10 minutes then turn it on.
- álso works well for cupcákes. Máke 7 cups of dough.
- For frosting, mix the butter softened until smooth. Slowly ádd powdered sugár, sált, tequilá, lime juice, ánd milk. Mix át medium speed for 3 minutes by ádding á little more liquid if needed or more powdered sugár if too thin. Reduce the mixer speed to low ánd mix in 3 minutes or until the buttercreám is soft ánd smooth.
