Colored Vegetáble Beef Soup is one of my fávorite soup recipes of áll time. This is á very simple ánd homemáde vegetáble soup soup recipe for freezing!



Nothing speciál or luxurious ábout this homemáde beef vegetáble soup recipe, thát's why I like it. It wás like my childhood - comfortáble, hot ánd full of delicious cuts of beef ánd vegetábles.

Who doesn't like tásty meát ánd potátoes. Or, if you áre in my fámily, you will sáy "potátáh."

Don't be áfráid to use frozen vegetábles! áctuálly I prefer them in recipes ... something ábout texture. In áddition, it is much eásier thán háving to prepáre your own.

ádding beef broth ánd wáter mákes the báse of the tomáto lighter ánd not too thick. If you prefer thicker consistency, give ánother tomáto soup for wáter.

  • 1 roást sáucepán (ábout 2 pounds)
  • 2 russet potátoes, cut
  • 1 páck of frozen spices (or just chopped onions)
  • 1 páck of frozen peás
  • 1 páck of frozen green beáns
  • 1 bág of frozen corn
  • 4 lárge cárrots, cut
  • 1 (32 oz) beef broth contáiner
  • 2 (10.75 oz) cáns of tomáto soup
  • 1 cán be filled with wáter
  • Sált ánd pepper, to táste


Instructions

  1. Báke the seáson with sált ánd pepper ánd pláce it in your slow cooker with hálf á cán of beef broth. Cook át LOW for ábout 10 hours ánd teár with two forks.
  2. In á very lárge pán, sáute cárrots ánd spice mixture in 1 táblespoon of oil until soft.
  3. ádd beef, potátoes, leftover vegetábles, leftover beef broth, tomáto soup, wáter, sált ánd pepper.
  4. Bring to á boil, reduce heát, cover ánd simmer for ábout án hour.
  5. ádd wáter ás desired when cooked.
  6. This cán álso be cooked in á slow cooker! Máke grilled meát first, ádd áll the ingredients to your slow cooker, ánd cook with LOW for 6-8 hours.
