Vegán Coconut Mángo Pánná Cottá

In this recipe, mángo is not á stár but á very tásty supporting pláyer. Mángo láyer ádds á tárt ánd sweet dimension. You cán páss it if you don't háve mángoes or you cán use different fruits if you háte mángo. (Who hátes mángo?)


Becáuse this is á vegán recipe, I use kánten (ágár ágár) insteád of gelátin. If you háve án ásián food store, thát is your best source for kánten. You cán álso buy it on ámázon here (áffiliáte link).

For this recipe, I use cánned coconut milk. I do not recommend using coconut drinks in cártons. You wánt the goodness of fát from coconut milk for texture.


Vegán Coconut Mángo Pánná Cottá

Result: 2-4 servings

DESCRIPTION
This recipe produces 2 lárge portions or 4 smáll portions.


INGREDIENTS

  • 1 cán be coconut milk
  • 1/4 cup of sugár or selected sweetener *
  • 1/4 teáspoon of vánillá
  • 1 tsp gránuláted cántine or gelátin
  • 1 smáll mángo, peeled ánd cut
  • * Use á liquid or gránulár sweetener equiválent to 1/4 cup of sugár. You cán táste the mixture ánd ádjust the sweetness when you go.


INSTRUCTIONS

  1. Heát coconut milk, sweetener ánd vánillá in á medium to low boiling sáucepán.
  2. Sprinkle 3/4 tsp of kánten / ágár into the coconut milk mixture ánd stir to dissolve it.
  3. Continue stirring for ábout 5 minutes.
  4. Máke sure to keep boiling, don't let it boil quickly. You don't wánt to máke it burn!
  5. áfter 5 minutes, pour the mixture into rámekin, cup or bowl.
  6. Pláce the pán cottá in the refrigerátor to set for 30 minutes before máking the next láyer.
  7. Blend the mángo in á smáll food processor blender.
  8. Don't worry to máke it smooth.
  9. Dissolve 1/4 teáspoon of kánten / ágár in very hot wáter.
  10. Mix kánten / ágár with mángo puree in á food processor.
  11. Lift the coconut cottá from the refrigerátor ánd wipe the mángo puree on top of eách.
  12. If the mixture is thick, use á spoon to spreád it.
  13. Put it báck in the refrigerátor for ánother 2 or 3 hours until it is instálled.
