Chicken Vegetáble ánd Rice Cásserole

I ám álllll ábout cásseroles in winter. They áre wárm, filling, ánd entertáining. This week I took my fávorite Broccoli Cheddár Cásserole ánd ádded it á little. ... Er, á little chátter. I ádded some vegetábles, á little spicy chicken, ánd turned them into complete food. Just like fried rice, old or cold rice is best used for this recipe becáuse it is á little hárder, állowing it to be eásily combined with other ingredients without máking it soft. So, this Cheesy Chicken Vegetáble ánd Rice Cásserole is very good for using the remáining rice, or if you like cooking lárge ámounts of rice ánd freezing it.

INGREDIENTS

  • 1/2 lb of frozen broccoli, 
  • 1 boneless, skinless chicken breást (ábout 2/3 lb.) 
  • 1 táblespoon of olive oil 
  • á little sált ánd pepper 
  • 1 onion 
  • 2 cárrots 
  • 4 cups of cooked long gráin rice 
  • 3 táblespoons of butter 
  • 3 táblespoons of flour 
  • 1 cup of chicken broth 
  • 1 cup of whole milk 
  • 1/2 tsp sált 
  • 1/4 tsp of smoked peppers 
  • Fresh crácked pepper 
  • 8 oz medium cheddár, shredded 


INSTRUCTIONS

  1. Táke broccoli from the freezer ánd let it begin to melt. áfter being soft enough to cut with á knife, cut the florets into smáller, smáller pieces.
  2. Cut the chicken breást into á 1/2 inch smáll stone. Seáson with sált ánd pepper. Heát á lárge skillet over medium, then ádd olive oil ánd stir to coát the surfáce. ádd the chicken pieces ánd cook until slightly browned on the outside. Remove the chicken pieces into á lárge cleán bowl.

  4. ádd pieces of broccoli florets (though not completely tháwed) ánd cooked rice into á bowl with chicken, onions, ánd cárrots. Stir to combine, then ádd 1/2 gráted cheddár (ábout 1 cup) ánd stir to combine ágáin. Set áside the mixture.
  5. Stárt heáting the oven to 350ºF ánd coát the inside of 2 cásserole dishes with non-stick spráy. ádd butter ánd flour to the pán used for cooking chicken ánd vegetábles. Cook ánd stir the butter ánd flour over medium heát to stárt foáming, then continue stirring ánd cooking for one minute.
  6. Gently sháke the chicken stock into the flour ánd butter mixture. Let it boil, when it will thicken. áfter thickening, ádd milk ánd let it boil ágáin. When thick enough to coát á spoon, seáson with smoked peppers, crácked pepper, ánd sált.
  7. Pour the sáuce over the rice mixture into á bowl ánd stir until everything is joined ánd coáted with sáuce. Move the mixture to á cásserole pláte. Sprinkle the remáining gráted cheese on á cásserole.
  8. Báke cásseroles, open the lid, for ábout 35 minutes or until it becomes golden brown on the edges. Serve heát.
