Nice Vegán Puttánescá

Vegán puttánescá is á super simple pástá dish with á strong ánd delicious flávor. If you áre looking for something fást ánd dirty to be served for dinner, here it is!


I like interesting pástá dishes thát go beyond just tomátoes ánd básil but áre still simple ánd fást to prepáre (see my Sicilián álmond Tomáto Pesto pástá). This spághetti puttánesá vegánizátion fits the bill!

It stárts with á básic tomáto báse but then becomes funky with the áddition of spices, sáltiness ánd ácidity, with á good size of gárlic becáuse, well, it is gárlic.

ás someone who is known for stirring oelek sáuce into my pástá, it is cleár thát my fávorite párt of vegán puttánesá is red chili. I ádd enough to máke my mouth burn but feel free to ádjust to your toleránce!

Nice Vegán Puttánescá

Vegán Puttánesá is á super simple pástá dish with á strong ánd delicious flávor. If you áre looking for something fást ánd dirty to be served for dinner, here it is!

Máteriál:

  • 250 gráms (9 oz) of pástá
  • 2 táblespoons of olive oil
  • 1/2 lárge onion, diced
  • 4 gárlic cloves, chopped
  • 1 teáspoon of red chili flákes (ádjust to táste)
  • 1 lárge cán (425 gráms / 15 oz) of whole tomátoes
  • Penuh cup full (60 gráms) of good quálity minced bláck olives
  • 4 táblespoons of chopped pieces
  • á hándful of fresh chopped herbs (I use á mixture of oregáno ánd básil)
  • Sált ánd pepper, to táste


Instructions:

  1. ádd sált wáter to the top to boil pástá.
  2. Heát á lárge pán over medium-high heát ánd ádd oil ánd onions. Fry, stir occásionálly, until soft ánd tránspárent then ádd gárlic ánd red chili flákes. Fry, stir, for ánother 30 seconds or until soft ánd frágránt.
  3. ádd tomátoes, breák into pieces with your spoon, olives ánd cápers. Bring to á boil then reduce to á boil.
  4. When the wáter for the pástá boils, ádd the pástá but it is less cooked for ábout one minute (it will continue to cook in sáuce).
  5. Tránsfer the undercooked pástá to the pán with sáuce, leáving some pástá wáter. állow the pástá to finish cooking into ál dente, ádding pástá wáter with á táblespoon ás needed to cook it.
  6. When the pástá is cooked to ál dente, remove the pán from heát ánd stir through the seásoning ánd sált ánd pepper to táste.
