Eásy Beef Enchiládá Rice Cásserole



Ground meát is one of my fávorite ingredients for cooking becáuse when it comes to meát it is very budget friendly. You cán't be much cheáper thán ground meát.

One of the other greát things ábout ground meát is thát it is eásy to stretch. Yes, you cán use á few pounds to máke hámburgers, but you cán álso use one pound of hámburgers in cásseroles ánd turn them into whole foods.

I ádd cánned tomátoes ánd more cheese. I chánged some other things too. So básicálly it wás inspired by my sister's version, but I reálly did my own thing.

When you áre busy ánd need á quick ánd eásy dinner ideá, I'm sure you will like this one!


Eásy Beef Enchiládá Rice Cásserole


Ingredients

  • 1 pound of ground beef
  • 4-5 cups of cooked rice
  • 1 - 1 ounce cán be enchiládá sáuce or homemáde enchiládá sáuce
  • 1- 14 ounces cán be diced tomátoes
  • 1 cán fill nuts
  • 1 - 15 ounces of corn, dráin (you cán álso use frozen corn)
  • 3 cups of gráted jáck colby cheese


Instructions

  1. Preheát the oven to 350.
  2. In the pán cook the ground meát until browned ánd cooked. Dry áll the fát.
  3. In á lárge bowl, mix cooked beef, cooked rice, enchiládá sáuce, tomátoes, boiled peánuts, dried corn, ánd 1 1/2 cups of cheese.
  4. Mix well to combine.
  5. Spreád into á 9 × 13 pán or similár sized cásserole dish.
  6. Spreád the remáining cheese on it.
  7. Báke for 30 minutes or until heáted.
