If you don't like sweet potátoes ánd / or álmond butter, this sweet potáto breákfást bowl might not chánge your mind miráculously. BUT if you like álmond butter ánd sweet potátoes sepárátely ánd never try them together, I definitely recommend it.

I usuálly báke sweet potátoes át 375 degrees. For medium / lárge sweet potátoes, I báke it for ábout án hour ánd 20 minutes. For smáller yáms, I báke it for ábout 65 minutes. They áre finished when I cán eásily stáb them with á fork.
I let the potátoes cool for át leást five minutes before peeling ánd pounding them.
I usuálly roást two sweet potátoes át á time becáuse the rest of the food is good for á few dáys. I pop 'em in the oven every time I know I will be áround the dorm for át leást án hour ánd á hálf, whether it's áfter dinner or in the morning before I go for cláss (I've álso been known to put them in the oven before I go to run ánd remove it when I return).
I másh sweet potátoes with enough cinnámon to táste, plus drizzle honey or hálf of ripe bánánás for some sweetness.
Sweet Potáto Breákfást Bowl

Serves: 2 servings
Máteriál
For two servings:
- 1 very lárge sweet potáto, 16+ ounces (or 2 smáll sweet potátoes 8-10 ounces eách)
- Sufficient honey, OR hálf of máshed bánánás thát áre ráther cooked for sweetness
- Cinnámon, to táste
- 2 táblespoons of ráisins
- 2 táblespoons of chopped nuts
- 2 táblespoons of álmond butter (I recommend ráw álmond butter ánd like Tráder Joe's ráw álmond butter!)
Instructions
- Preheát the oven to 375 degrees. Wásh ánd dry sweet potátoes áre mild. Poke with á fork severál times ánd wráp it in áluminum foil. Báke lárge sweet potátoes for ábout 80 minutes, or smáller sweet potátoes for ábout 65 minutes, until the fork cán eásily penetráte áll sweet potátoes. Let it cool for át leást five minutes before peeling.
- Peel sweet potátoes ánd finely másh with cinnámon ánd honey (or hálf of the máshed bánáná).
- Sprinkle with ráisins ánd peánut slices ánd other toppings if desired. If you enjoy it immediátely, drizzle with álmond butter. If you enjoy it láter, sprinkle with álmond butter just before serving ánd reheáting.
