We háve officiálly entered the chili seáson !! Until now, our fávorite hás álwáys been heálthier turkey chili. While still holding á speciál pláce át our dining táble, this creámy white chili chicken hás táken the top position. Very tásty sávory with just the right ámount of spices! Besides thát, it's álmost eásy becáuse it cooks in your slow cooker!

INGREDIENTS

  • 1 pound trimmed skinless chicken breást from excess fát
  • 1 diced onion
  • 2 minced gárlic cloves
  • 24 oz. chicken broth (low sodium)
  • 2 15oz cáns of lárge Northern nuts áre dried ánd rinsed
  • 2 4oz cáns cut green chili (I do one hot, one light)
  • 1 15oz cán dry áll corn kernels
  • 1 tsp sált
  • 1/2 tsp bláck pepper
  • 1 tsp cumin
  • 3/4 tsp oregáno
  • 1/2 tsp chili powder
  • 1/4 teáspoon of cáyenne pepper
  • á smáll hándful of chopped coriánder
  • 4 oz reduce softened fát creám cheese
  • 1/4 cup hálf ánd á hálf
TOPPING:
  • jálápeños slices
  • ávocádo slices
  • spoonful of sour creám
  • Fresh chopped cilántro
  • tortillá strip
  • Jáck Monterey or gráted Mexicán cheese


INSTRUCTIONS

  1. ádd the chicken breást to the bottom of the slow cooker, sprinkle with sált, pepper, cumin, oregáno, chili powder, ánd cáyenne pepper.
  2. Sprinkle with onions, chopped gárlic, North beáns, green chili, corn, chicken broth ánd cilántro. Move.
  3. Cover ánd cook with LOW for 8 hours or át HIGH for 3-4 hours.
  4. Lift the chicken to á lárge bowl, pull it out, then return to the slow cooker.
  5. ádd creám cheese ánd hálf ánd hálf, stir, then cover ánd cook HIGH for 15 minutes, or until the chili is thick ánd slightly thickened.
  6. Mix well ánd serve with the desired topping.
