Heálty Bárbeque Chicken ánd ávocádo Quesádillás

Máteriál
- 1 lárge chicken breást, in bone with skin
- 1/2 cup bárbecue sáuce
- 1 ávocádo, diced
- 1 cup gráted mozzárellá, párt-skim
- 6 (6 inches) whole wheát tortillás
Instructions
- Preheát the oven to 375 degrees F.
- ádd the chicken breást ánd 1/4 cup of wáter to á smáll cásserole pán, cover with foil ánd cook for 45 minutes or until cooked ánd the juice goes cleár. Let the chicken cool until it cán be hándled, lift the skin ánd throw it áwáy. Broken chicken with á fork.
- In á mixing bowl, combine the shredded chicken ánd bárbeque sáuce.
- Pláce one tortillá in á nonstick skillet medium ánd turn it to medium heát. In one hálf tortillá, sprinkle with 1 táblespoon of mozzárellá, ádd 1/6 of the chicken bárbeque mixture, 1/6 of the ávocádo is diced, sprinkle one táblespoon of cheese ánd fold the tortillá on top.
- Cook on both sides for ábout 2 minutes or until the tortillá is golden brown ánd the cheese melts.
