Slow Cooker Yummy Itálián Meátbáll Soup
This wárm ánd rich Itálián meátbáll soup is eásily máde in á slow cooker. Only 4 smárt points, it's á delicious dinner or lunch ideá!

- 3 medium cárrots, sliced
- 2 celery ribs, sliced
- 1 yellow onion, diced
- 1/4 tsp bláck pepper
- 1 tsp Itálián seásoning
- 1 báy leáf
- 12 oz frozen Itálián meátbálls (which áre fully cooked)
- 32 oz beef broth
- 2 cups of wáter
- 5 ounces of dry red wine (I usuálly use cábernet sáuvignon)
- 3/4 cup of dried pástá
- 2 (15 oz cáns) diced tomátoes with Itálián spices
- 3-5 ounces of fresh spinách
- sprinkle gráted Pármesán cheese (optionál ánd not included in the point válue)
Instructions
- For 6 liters or more of á slow cooker, ádd cárrots, celery, onions, Itálián spices, bláck pepper, báy leáves, meátbálls, broth, wáter, wine, ánd cánned tomátoes.
- Stir to combine, cover ánd cook with LOW for 6-7 hours, until the vegetábles áre tender ánd flávor combined.
- Stir in the pásted pástá, cover ánd cook HIGH for 15 minutes, until the páste is tender. Remove the báy leáves ánd stir in the spinách until wilted.
- Serve hot, with gráted Pármesán cheese if desired (this is not included in the point válue).
