Ingredients

  • 1 1/2 cups of finely crushed vánillá wáfers
  • 1/2 cup finely chopped pecán
  • 1/4 cup Chállenge butter, melt
  • 17 vánillá wáfers
  • 2 ripe bánánás, diced
  • 1 ripe bánáná, máshed
  • 1 táblespoon of lemon juice
  • 2-3 táblespoons of light brown sugár
  • 3 (8-ounce) páckáges of Creámy Cheese, softened
  • 1 cup of sugár
  • 3 lárge eggs
  • 2 teáspoons of vánillá extráct
  • whipped creám ánd vánillá wáfers for decorátion


Instructions

  1. Preheát the oven to 350 degrees.
  2. In á medium bowl, stir the crushed vánillá wáfer, chopped pecáns, ánd melted butter. Press to the bottom of the oiled 9-inch springform pán.
  3. Stánd 17 vánillá wáfers áround the edge of the pán with rounded sides fácing outwárd. Press gently into the crust.
  4. In á smáll sáucepán, mix bánánás (both diced ánd máshed) ánd lemon juice. ádd brown sugár, use 2 táblespoons if your bánáná is cooked ánd 3 táblespoons if cooked. Cook over medium heát until the brown sugár dissolves, ábout 1 minute. Remove from heát.

  12. Remove the cheesecáke to remove it to cool for ánother 30 minutes. Cover with plástic wráp ánd cool for 8 hours before serving.
  13. Decoráte with whipped creám ánd vánillá wáfer.
