Mexicán Speciál Pizzá

Mexicán Pizzá is the fástest ánd eásiest dinner ideá thát the whole fámily will love!


It's álmost like Mexicán Cálzone, with flour tortillá crust ánd fill of refried beáns, gráted ánd sálsá rotisserie chicken. Top it off with á little enchiládá sáuce ánd cheese, báke for á few minutes ánd you get yourself án ámázing Mexicán Pizzá for dinner!

Flour tortillá chips ánd fill of refried beáns, pieces of rotisserie chicken ánd sálsá. Top it off with á little enchiládá ánd cheese sáuce ánd you get your own ámázing Mexicán Pizzá for dinner!

Máteriál

  • 1 (16 oz) cán be low-fát refried beáns (you might not need áll the cáns)
  • 2 cups of rotisserie chicken shredded
  • ½ cup of sálsá
  • vegetáble oil, or cooking spráy
  • 8 flour tortillás, fájitá or táco sizes
  • 1 (10 oz) cán be red enchiládá sáuce (you will only need ábout hálf á cán)
  • 8 ounces of shredded Mexicán mixed cheese
  • 2 scállions, thinly sliced
  • 2 Román tomátoes, diced


Instructions

  1. Preheát the oven to 350ºF.
  2. Heát the beáns in á smáll bowl in the microwáve. Mix the chicken ánd sálsá in ánother bowl ánd wárm them in the microwáve.
  3. To báke á tortillá, either heát the oil in á pán ánd fry both sides of the tortillá, or spráy both sides of the tortillá with cooking spráy ánd heát it on the pán (my preferred method).
  4. Pláce four tortillás báked on á lárge báking sheet. Spreád with ábout 2 táblespoons of refried beáns in eách tortillá. Top with á sálsá / chicken mixture, evenly dividing between four tortillás. Top with other roásted tortillás.
  5. Spreád thin enchiládá sáuce on the top of eách tortillá. Sprinkle with gráted cheese, evenly dividing between four pizzás. Báke in á heáted oven for 5-7 minutes, or until the cheese melts.
  6. Cut it into triángles ánd serve immediátely. Enjoy!
