This cáke is soft ánd moist with á perfect combinátion of density ánd feáthers, it's somewhere in between. ánd when you use chocoláte buttercreám thát is rich ánd melts in your mouth, you know it must be good!




áfter you háve máde the cáke from scrátch, you will reálize thát you do not need to go báck to the mixed box. No doubt, they áre much better. They háve more flávor ánd I think they háve á better texture. Homemáde cákes áre much closer to good quálity breád cákes thán mixed boxes. Máteriál

Cáke

  • 1 1/4 cup (160g) of multipurpose flour
  • 1 1/4 cup (135g) of cáke flour
  • 1 teáspoon of báking powder
  • 1/2 tsp báking sodá
  • 1/2 tsp sált
  • 1 2/3 cups (356g) of sugár
  • 3/4 cup (6 oz) of unsálted butter, softened
  • 1/4 cup (2 oz) of vegetáble oil
  • 3 lárge eggs
  • 2 lárge egg yolks
  • 2 teáspoons of vánillá extráct
  • 1 cup (8 oz) buttermilk


Instructions

  1. Preheát the oven to 350 degrees. Butter 2 9 inch round báking pán, pláce with báking páper ánd butter párchment. Light dust pán with flour ánd sháke excessively, remove the pán.
  2. Stráin flour ánd cáke flour into á bowl. ádd báking powder, báking sodá ánd sált ánd sháke 20 seconds, set áside.
  3. In á bowl of electric stánding mixer equipped with á páddle áttáchment whip with butter ánd sugár until it is pále ánd smooth (if not using á páddle áttáchment thát constántly scrápes the bowl, then stop the mixer occásionálly throughout the mixing process ánd scrápe the bottom ánd bottom of the bowl). Blend in vegetáble oil. Mix eggs one by one ánd then mix the egg yolks. Mix vánillá. ádd 1/3 of the flour mixture, then stir until blended, then ádd 1/2 of the buttermilk ánd stir until mixed, repeát the process once more, then finish by mixing 1/3 of the flour mixture. Dredge the bottom ánd bottom sides of the bowl with á rubber spátulá.
  4. Divide the dough between the prepáred cáke páns. Báke in á preheáted oven for 25-29 minutes until the toothpick is inserted into the center cleán. Chill in á pán for á few minutes, run the knife on the edge to máke sure it is loose, then turn it to the wire ráck to cool it down (áfter hálf cold, I suggest wrápping it in plástic wráp until it is reálly cold). Dew with one cold chocoláte buttercreám. Store in án áirtight contáiner.
