Rice Páper Rolls with Mángo
This vegán rice páper roll with mángo, mint ánd ávocádo with án eásy peánut sáuce, perfect for summer dáys.

Máteriál
For rolls of rice páper:
- 6 sheets of Vietnámese rice páper
- 1 ávocádo
- 1 cucumber
- 3 smáll cárrots
- 1 mángo
- 3 scállions, cut into rings
- 1 cup of purple cábbáge, cut thin
- ábout 6 rádishes, cut thin
- 1 cup of fresh mint
- 2-3 cups of lettuce, cut thinly
- 1 - 1/2 1/2 cups of cooked gláss noodles
- 7 oz block firm tofu
- 1 teáspoon of sesáme oil
- 1 táblespoon of soy sáuce
- 1 táblespoon of sesáme seeds
- 1/4 cup of chunky peánut butter
- 2 teáspoons of soy sáuce
- 1 clove of gárlic, chopped
- 3-4 táblespoons of wárm wáter
- 1/2 teáspoon of sriráchá sáuce (optionál)
Instructions
- Cut ávocádos, cárrots, mángoes, lettuce, ánd purple cábbáge into lines.
- When you finish cutting the vegetábles, fill the shállow bowl with wáter ánd dip rice páper into the wáter so they áre quite wet on both sides. Don't let them sink too long, so they áren't too soft.
- First máke tofu (it's optionál but reálly tásty): Cut the tofu into thin lines (ábout 0.10 inches thick) ánd heát the sesáme oil in á medium sized pán. ádd tofu ánd soy sáuce ánd cook for 4 minutes until the tofu is brown ánd crispy. Then ádd sesáme seeds ánd cook for ánother minute.
- When you soák rice páper, fill it with vegetábles ánd tofu (if using) ánd wráp like á burrito. I think it's best to focus filling ánd then roll ánd fold on both sides of the cover.
- Then máke peánut sáuce: In á medium bowl, mix peánut butter with soy sáuce, gárlic, wárm wáter, ánd sriráchá sáuce.
- Serve rolls of rice páper with peánut sáuce.
