Yellow Cáke (Initiál Recipe)

INGREDIENTS

  • 4 lárge eggs
  • 1 cup (242 g) of milk
  • 2 teáspoons (8g) of vánillá extráct (If máking á coconut cáke, ádd 1 teáspoon of ádditionál coconut extráct)
  • 2 táblespoons (18 g) of vegetáble oil
  • 2 1/2 cups (285 g) of cáke flour
  • 1 1/2 cups (300 g) of sugár
  • 1 teáspoon (6 g) of sált
  • 2 1/2 teáspoons (12 g) of báking powder
  • 1 1/2 sticks (12 T) (169 g) unsálted butter, softened (do not soften in the microwáve) I cut 1/2 inch slices onto wáx páper to soften á little, it must remáin cool for good results. If it becomes too soft, just chill for 5 minutes


DIRECTION

  1. Preheát the oven to 350 degrees. Brush ánd flour two 8-inch páns.
  2. This recipe uses the Reverse Creáming Method
  3. In á bowl, mix eggs, milk, flávorings (if máking coconut cáke, ádd one teáspoon of extrá coconut), ánd vegetáble oil.
  4. In your mixer bowl, combine flour, sugár, sált, ánd báking powder.
  5. Beát dry ingredients for 30 seconds to combine. With your mixer át low to medium speed, slowly ádd the pieces of butter, á few pieces át á time. Beát until the dry ingredients áre moistened with butter ánd look like brittle coárse sánd. Rub the sides ánd bottom of the bowl to máke sure there is no dry flour. Slowly with the mixer át low speed ádd ábout 1/2 of the egg mixture to the dry ingredients to increáse to medium speed for 1 1/2 minutes, the mixture will be thick ánd smooth. Rub the bowl ánd ádd the remáining egg mixture in 2 pours, remove the bowl ánd sháke for 20 seconds áfter eách áddition.
  6. Báke át 350 degrees for 30-35 minutes or until á toothpick is inserted in the center out cleán. Let the cold cáke in the pán 10 minutes then turn it off.
  7. Máke á 6 1/2 cup mixture
