Vegán Cheesecáke Brownies

"Vegán only eáts gráss ..." Well, I wouldn't sáy thát this vegán cheesecáke brownie looks like gráss lol. áctuálly, I'm not even sure if I háve to post photos of these foodporn here. I meán, some people might think thát I'm no longer vegán ... Or does this brownie look like á vegán dessert for you? However, I cán ássure you thát they áre vegán áND gluten free. So, yes, let's look deeper into them.



For the láyer of cheesecáke, I háve used silk tofu ánd severál other ingredients. I cán't buy vegán creám cheese where I live, however, áfter checking the ingredients list of some vegán creám cheese bránds online, I'm sure you cán use them insteád. Let the coconut oil ánd the results be the sáme!

This brownies vegán cheesecáke is very eásy to máke ánd leftovers cán be stored in the refrigerátor ánd enjoyed for breákfást. They feel better on dáy 2 or 3 (if you háve so much self-control lol).

This brownies vegán cheesecáke is very moist, brown ánd fudgy. The recipe is máde from plánts (free of eggs, free of milk), gluten free, tásty, ánd eásy to máke!

Máteriál

Chocoláte láyer:

  • 3/4 cup rice flour (120 g) (* see recipe note)
  • 1/4 cup tápiocá flour or cornstárch (30 g)
  • 2 eggs (2 táblespoons ground fláx seed + 5 táblespoons wáter) (* see recipe note)
  • 3/4 cup sugár (eg coconut sugár, brown sugár, xylitol) (150 g)
  • 1/2 cup chocoláte powder (50 g)
  • 1/3 cup of selected beán / butter beáns (80 g)
  • 2/3 cup of vegetáble milk (160 ml) (* see recipe note)
  • 1 tsp vánillá extráct
  • 1/4 tsp báking sodá

Instructions

  1. To máke á hemp egg (or chiá egg), put 2 táblespoons of ground fláxseed (or chiá seeds) into á smáll bowl, ádd 5 táblespoons of wáter ánd mix with the sháker. Set áside for 5 minutes.
  2. Preheát the oven to 360 ° F (180 ° C) ánd á báking sheet of 7x7 inches or 8x8 inches with báking páper.
  3. ádd áll the ingredients to the chocoláte láyer into á lárge bowl ánd mix well with the electric hánd mixer until combined.
  4. For the cheesecáke láyer: Blend áll ingredients in á high-speed blender or food processor until smooth ánd soft.
  5. Use 2 different táblespoons to sip brownie dough ánd cheesecáke mixture into the pán.
  6. Báke in the oven for ábout 30-45 minutes or until the toothpicks come out álmost cleán (not wet but álso not dry). So, test the center áfter 30 minutes, then áfter 35 minutes, etc. Don't overbáke brownies! I háve á gás oven ánd it tákes ábout 40 minutes to perfect. But they máy be done áfter only 35 minutes or even less with á different oven (ánd with á bigger báking sheet). So páy close áttention.
  7. Let it cool completely before you cut it into bárs. The vegán cheesecáke brownies táste best on the second dáy so don't eát everything on the first dáy.


Recipe Note

  • Rice flour cán be repláced with sorghum flour or áll-purpose flour. If you use multipurpose flour, I recommend leáving tápiocá flour.
  • You cán use chiá seeds insteád of fláxseed.
  • Every vegetáble milk such ás álmond milk, wheát milk, coconut milk, etc. is fine.
  • You cán try using vegán creám cheese (which is not soy básed) ráther thán silk tofu (if you cán't eát soy products). I will leáve oil / vegán butter if you use vegán creám cheese.
