Finálly begán to feel like fálling here. The morning is á bit cold, but wárms up to the 70s which is very comfortáble during the dáy. This is probábly my fávorite weáther type. ánd áutumn, for sure, hás some of my fávorite flávors.

Heálthy Cárrot Cáke Cookies
High protein; Sugár free; Vegán; Low fát; High fiber; Refined Sugár Free

Máteriál
- 2 cups of áncient oát rolls
- 1/2 cup of soy protein powder (vánillá or without flávor)
- 1/4 cup of buckwheát flour
- 2 teáspoons of cinnámon
- 1/2 tsp állspice
- 1/2 tsp sált
- 1 tsp báking sodá
- 1 cup unsweetened ápple sáuce
- 1/2 cup of sticky sweetener (I use á mixture of ágáve ánd molásses)
- 1 táblespoon + 1 tsp ápple cider vinegár
- 1 tsp vánillá extráct
- 1 1/2 cups of cárrots, gráted
- 1/2 - 2/3 cups of ráisins
Instructions
- Preheát oven to 325 F ánd fát or pláce with báking páper 2 tráy of cáke sheet.
- With á gráter or food processor, gráted cárrots. You will need ábout 2 lárge cárrots if you don't buy the ones álreády shredded.
- In á lárge bowl, ádd wheát flour, protein powder, buckwheát flour, cinnámon, állspice, sált, ánd báking sodá. Stir or sháke to join.
- ádd to the bowl of ápplesáuce, sticky sweetener, ápple cider vinegár ánd vánillá extráct. Mix well until completely inserted.
- Fold in cárrots ánd gráted ráisins.
- Meásure 1/4 cup of dough ánd roll it into á báll. Pláce the báll on top of the cáke sheet ánd press until the cookie is ábout 1/4 "thick. The dough is slightly sticky, so if you wet your hánds it will help keep the dough from sticking to them.
- Báke for 9-10 minutes. or until the center of the cookie is slightly chewy to the touch ánd the dough is no longer sticky.
- Let the cookie cool down (ábout 10 minutes) then tránsfer it to the wire ráck to continue cooling ... or just eát it!
