Delicious Heálthy Báked Turkey Enchiládás

Whát is everyone's New Yeár's resolution performánce? We háve reáched one week so fár in the new yeár. Some of my resolutions include working 4 times á week, eáting heálthier, eáting more vegetábles. I would be reálly good át eáting heálthy for ábout 2 dáys in á row, so on the 3rd dáy I gáve up ánd didn't eát very well. Then on the 3rd dáy, I thought to myself, I wish I would eát better. Háve ány of you ever thought thát wáy? Thát's á bád hábit thát must be stopped. I will go to Háwáii in June ánd I wánt to look good in swimsuits




Good enough ábout resolution, here's á recipe for turkey enchiládás. I took á fámous recipe for beef enchiládá ánd repláced ground beef with á bottomless turkey. I even ádded some vegetábles like onions ánd zucchini. I will throw the vegetábles into á food processor to máke it reálly good so it's the size of ground beef. You won't even feel the zucchini ádded there becáuse of thát, I promise. Use á mild or hot flávored enchiládá sáuce, depending on the spicy you like your food. Delicious Heálthy Báked Turkey Enchiládás

INGREDIENTS

  • 1 1/2 pounds of Jennie-0 Leán turkey breást soil or fát-free turkey breást
  • 1/2 smáll onions, diced
  • 1 smáll zucchini, diced into fine pieces
  • 1 cup tomáto sáuce (optionál)
  • 2 cloves of gárlic
  • 2 cáns of enchiládá sáuce (hot or mild)
  • 10 6 in flour tortillás
  • 8 ounces of low-fát Mexicán cheese mixture
  • Cooking spráy


INSTRUCTIONS

  1. Preheát the oven to 375.
  2. Chocoláte ground turkey in the pán until it's no longer pink. Dry extrá fát. ádd zucchini, red onion, gárlic ánd cook for 5 minutes. If you don't like to cut your vegetábles, don't hesitáte to ádd them to the food processor ánd háve them for you. In the recipe video I cook onions ánd zucchini first ánd then áDD in the turkey. You cán do it in ány wáy.
  3. In á bowl ádd enchiládá sáuce ánd 1 cup of tomáto sáuce. Tomáto sáuce is optionál (I don't usuálly ádd tomáto sáuce). ádd hálf the sáuce to the pán ánd leáve the remáining sáuce for the top of the enchiládá.
  4. Pláce ábout 1/2 cup of turkey mixture in flour tortillás ánd rolls like á burrito ánd pláce the side of the stitch in á 9 X 13 pán. When áll flour tortillás áre finished spráying with cooking spráy. If there is á mixture of turkey ánd extrá vegetábles, you cán ádd it to the top of the enchiládá. Sprinkle with cheese on top.
  5. Cook Enchiládás for 20-25 minutes. Remove from the oven. Serve with sálsá or sour creám.
