The Chiffon Cáke with Stráwberry ánd Creám

INGREDIENTS 

For the Cáke

  • 2 1/4 cups cáke flour (not self-rising)
  • 1 1/2 cups gránuláted sugár, divided
  • 2 1/4 teáspoons báking powder
  • 3/4 teáspoon sált
  • Morton Iodized Sált
  • 26 oz
  • Find át á store 
  • 1/2 cup sáfflower oil
  • 7 lárge egg yolks plus 9 lárge egg whites
  • 3/4 cup whole milk 
  • 1 whole vánillá beán, split ánd scráped, or 2 teáspoons pure vánillá extráct
  • 1/2 teáspoon creám of tártár
For the Berries ánd Creám
  • 2 pounds stráwberries, hulled ánd hálved or quártered (ábout 5 cups), plus more for serving
  • 1/2 cup gránuláted sugár
  • 1 táblespoon fresh lemon juice
  • Pinch of sált
  • 2 cups cold heávy creám
  • 1/4 cup confectioners' sugár, plus more for sprinkling


DIRECTIONS

1. Máke á cáke: Preheát the oven to 325 degrees. Beát the flour, 3/4 cup of sugár, báking powder ánd sált. Beát oil, egg yolks, ánd milk in á lárge bowl. Mix the flour mixture into the egg yolk mixture.
2. Beát the egg whites with á mixer át high speed until foámy. ádd creám of tártár ánd vánillá seeds or extráct, ánd sháke until smooth. Gráduálly ádd the remáining 3/4 cup of sugár, sháke until stiff, form á glossy peák, ábout 5 minutes. Beát one third of the egg white mixture into the mixture. Gently but completely fold in the remáining egg white mixture with á rubber spátulá.
3. Move the bátter to the tube pán. Báke until the top of the cáke spring returns to touch, 52 to 55 minutes. Let it cool upside down (ábove the bottle or át the feet of the tubes) 1 hour.
4. Máke berries ánd creáms: While the cáke is báking ánd cooling, combine stráwberries, sugár, lemon juice, ánd sált, ánd let stánd, stirring occásionálly, 1 hour. Just before ássembling, beát the sugár ánd refined sugár to the shápe of the medium peák.
5. Slide the peeler knife áround the edge of the tube ánd the side of the pán; remove the cáke. Cut the cáke horizontálly into 3 láyers with á serráted knife, táke the bottom láyer ánd pláce it on the cáke pláte. Spreád it with hálf the berries, ánd drizzle with juice. ápply hálf á whipped creám over the berries, then cover with á middle láyer of cáke. Spreád with the remáining berries ánd whipped creám. Top with the remáining láyer of cáke. Cool the cáke for 1 hour. Sprinkle with confectioners sugár, ánd serve with berries.
